Savoury Puff Twists.

250 g/9 oz/1/2 packet frozen puff pastry (paste), thawed 15 ml/1 tbsp yeast extract 50 g/2 oz/1/2 cup Cheddar cheese, finely grated Beaten egg, to glaze.
Roll out the pastry on a lightly floured surface t a 30 cm/12 in square. Spread with the yeast extract, then sprinkle with the cheese. Fold in half and flatten lightly with a rolling pin. Brush with beaten egg, then cut into thin strips. Hold each end of a strip and twist it. Place on a dampened baking sheet. Repeat with the remaining strips. Bake in a preheated oven at 200°C/400HF/gas mark 6 for about 10 minutes until puffy7 and golden brown. Serve w arm or cold.

Cheese and Poppy Seed Straws.
100 g!4 oz/1/2 cup plain (all-purpose) flour Good pinch of salt.
1. 5 ml/1 tsp cayenne.
65 g/21 1 lscant 1 cup butter or margarine 65 g/21/! oz/1 scant 1 cup Cheddar cheese, grated.
1 small egg, beaten.
Sift the flour, salt and cayenne into a bowl. Add the butter or margarine and rub in with the fingertips. Stir in the cheese. Mix with enough beaten egg to form a firm dough. Roll out on a lightly floured surface to a rectangle about 5 mm/1/2in thick. Cut into thin strips about.
7. 5 cm/3 in long. Transfer to a greased baking sheet. If liked, roll out the trimmings and cut into rings using a large and small cutter. Bake in a preheated oven at 180°C/350°F/gas mark 4 for about 7 minutes until pale golden brown. Cool on a wire rack. Serve, if liked, in small bundles, held in place with the pastry rings.
