Cheese and Pecan Sables
Cheese and Herb Palmiers
75 g/3 oz/1/2 cup plain (all-purpose) flour
Salt and freshly ground black pepper 75 g!3 oz/1/2 cup butter or margarine 75 g/3 oz/ I3/ cup Cheddar cheese, grated 25 g/1 oz/1/2 cup pecans, chopped Beaten egg, to glaze
Mix the flour with a pinch of salt and a good grinding of pepper. Rub in the butter, then stir in the cheese and pecans. Knead well to form a firm dough. Roll out to a rectangle about 20 x 10 cm/8 x 4 in. Brush with beaten egg, then cut in half lengthways, then each strip into equal squares, then each square into two triangles. Transfer to a greased baking sheet and bake in a preheated oven at 190°G/ 375°F/gas mark 5 for 10 minutes. Sprinkle with a little salt and serve warm.
