Cheese and Sesame Palmiers.
Prepare as for Swiss Cheese Palmiers but substitute grated Cheddar cheese for the Emmental and sprinkle with 30 ml/
2 tbsp sesame seeds before rolling up. Sprinkle with a few more seeds before baking.
Blue Cheese Nibbles.
MAKES ABOUT 30
75 g/3 oz/1/2 cup wholemeal flour 75 g/3 oz/! / cup unsalted (sweet) butter.
75 g/3 oz/1/2 cup blue cheese, crumbled.
1 egg, beaten.
45 ml/3 tbsp plain yoghurt or single (light) cream 30 ml/2 tsp fennel seeds.
Put the flour in a bowl. Rub in the butter and stir in the cheese. Mix with enough beaten egg to form a soft but not sticky dough. Knead gently, then wrap and chill for 30 minutes. Roll out thinly on a floured surface and cut into rounds using a 5 cm/2 in plain cutter. Transfer to baking sheets. Brush with yoghurt or cream and sprinkle with fennel seeds. Bake in a preheated oven at 180°C/ 350°F/gas mark 4 for about 12 minutes or until golden brown. Cool slightly, then transfer to a wire rack to cool.
