Recipe for Dinner

Fried Chinese lee Cream

serves 4

8 scoops of ice cream

Oil, for deep-frying

90 ml/6 tbsp plain (all-purpose) flour

2 eggs, beaten

50 g/2 oz/1 cup white breadcrumbs 15 ml/1 tbsp desiccated (shredded) coconut

Raspberry or Apricot Coulis ( 319-20)

On a clean baking sheet lined with greaseproof (waxed) paper, place the scoops of ice cream. Refreeze immediately until really frozen – about 6 hours. Heat the oil in a deep-fryer to 190°C/375°E Coat each frozen scoop of ice cream all over in flour. Dust the surplus away. Dip in beaten egg, then roll in the breadcrumbs mixed with the coconut, making sure that there is a thick coating of crumbs and coconut. Deep-fry for 30 seconds only – this is very important. Serve immediately with Raspberry or Apricot Coulis.
