Dining Yamba

Recipe for Dinner.

Swiss Cheese Palmiers.


225 g/8 oz/1/2 puff pastry (paste)

1 egg, beaten.

225 g/8 oz/ 2 cups Emmental (Swiss) cheese, grated 5 ml/1 tsp cayenne Salt and freshly ground black pepper.

Roll out the pastry to a large rectangle, about 5 in thick.

Brush with the beaten egg. Sprinkle liberally with the cheese and dust with cayenne. Season lightly. Starting at one shorter side, roll up to the centre. Then roll up the opposite side into the centre. Cut the roll into slices and arrange on a dampened baking sheet. Brush with any remaining egg and bake in a preheated oven at 200HC/ 400°F/gas mark 6 for 15 minutes until puffy and golden. Transfer to a wire rack to cool.


Prepare as for Swiss Cheese Palmiers but substitute grated Cheddar cheese for the Emmental and sprinkle with 5 ml/

1 tsp dried mixed herbs and 15 ml/1 tbsp chopped parsley before rolling up.
