Jammy Rice Pudding
Prepare as for Simple Rice Pudding but remove the skin 5 minutes before the end of cooking and spoon 45-60 ml/ 3-4 tbsp jam of your choice warmed with 20 ml/4 tsp water over the surface of the rice and return to a preheated oven to glaze.
Brown Rice and Raisin
Prepare as for Simple Rice Pudding but substitute brown short-grain rice for the white rice and simmer for 30 minutes, adding a little more of the milk if necessary. Add 50 g/2 oz/1/2 cup raisins with the remaining ingredients.
