Recipe for Dinner
45 ml/3 tbsp grated beetroot (red beet)
300 ml/1/2 pt/1 cups Mayonnaise ( 305)
Mix together the beetroot and Mayonnaise and spike with lemon juice to taste. Store in a screw-topped jar in the fridge. * v
Curried Fruit Mayonnaise
Verdant Velvet Dressing
60 ml/4 tbsp Mayonnaise ( 305)
1 garlic clove, crushed 10 ml/2 tsp curry paste
2.5 ml/1/2 tsp lemon juice 25 g/1 oz/1/2 cup sultanas (golden raisins), chopped 25 g/1 oz/1/2 cup dried apricots, chopped
Mix together all the ingredients and chill before serving.

During pregnancy, as well as in life in general, stress is often unavoidable. In those times, an expectant mother may find that taking proper care of her physical and emotional well-being and appropriately coping with stress can help to make pregnancy more enjoyable. From a mental health perspective, it is also important to note that acceptance of stress can allow a woman to feel more in control of her health and of her pregnancy. While taking measures to eliminate stress is important, awareness and acceptance that stress is inevitable and unavoidable may be an essential first step in coping. This can be referred to as mindfulness. Being mindful and allowing one to be present and self-aware can help to make stressors more bearable, particularly during pregnancy. Mindful practices can be simple: being present in the moment, paying attention to breathing and body cues, accepting what a mother is experiencing and feeling, rather than fighting or pushing the feelings away, and being intentional about being present in that moment with those emotions.
