Recipe for Dinner
MAKES ABOUT 450 G/1 LB
Prepare as for Lemon Curd but substitute 3 or 4 limes for the lemons.
450 g/1 lb cooking (tart) apples, cored and quartered 450 g/1 lb onions, quartered 450 g/1 lb/2 cups light brown sugar 450 g/1 lb/22/ cups sultanas (golden raisins)
450 g/1 lb/22/ cups dates, stoned (pitted) and chopped 600 ml/1 pt/2’/ cups vinegar Salt and freshly ground black pepper
2.5 ml/1/ tsp cayenne
2.5 ml/1/2 tsp ground allspice
2.5 ml/1/ tsp ground ginger
Place the apples and onions in a food processor and process for 1 minute or until finely chopped. Alternatively, pass through a coarse mincer (grinder). Put all the ingredients into a large bowl, stir well and cover. Leave for 24 hours, stirring occasionally. Bottle and label. Store in a cool, dark place.
